These are great for recipes where intact lentils are preferable to a mush or puree, like salads or light soups. Their thicker skin also slightly increases cooking time, but they’re still ready in about 40 minutes, making them a great choice for weekday dinners.

Lentils are grown in rotation with wheat and or barley on the same farm ground. Since lentils and wheat are similar in size, trace amounts of wheat may be found in the lentils.
Directions
Use 3 cups liquid (water or stock of your choice) to 1 cup dry lentils. Be sure to use a large enough saucepan, as the lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat, and simmer until tender. Cooking time is typically 30–40 minutes
