You can cook them whole like other beans, but they really shine when sprouted—in fact, they’re second only to alfalfa in terms of popularity among home growers. Mung bean sprouts make a fantastic snack! Not only is the bean sprout much easier to digest than the actual bean, but it’s the only source of Vitamin C and Vitamin B12 among the sprouted beans.
When sprouting mung beans, follow typical sprouting instructions, but place the beans in a flat container or sprouter, cover with a clean cloth, and place a heavy object such as a brick on top. This will produce stout, thick roots.
