Green peas and their yellow cousins both come from the pea plant, pisum sativum—the very same plant the famous Gregor Mendel studied to formulate the first theory of genetics! Green peas are a bit sweeter than yellow peas.

Directions
Add 3 cups water for every 1 cup green split peas. Bring to a boil, reduce heat, and simmer for 30–40 minutes. Season to taste.
